• birthDate (required) — Birth date of the patient (YYYY-MM-DD)
• gender (required) — Gender of the patient
• identityType (required) — Type of patient identity document
• identityValue (required) — Patient identity document number
• additionalFields — Optional extra patient data such as cellphone, email, address, or insurance plan ID

Returns the created patient record, including any generated ID and optional fields (cellphone, email, address, insurancePlanId) if provided.
